![]() The Domaine CHATEAU GAUNOUX consists of 10 Hectares, exploited by Mr François Gaunoux and his daughter Claudine Gaunoux. We are proud of the qualtiy and the age of our vineyard. We don't replant too much, we don't obtain light green wine. We are planting out in some old parcel. The father an daughter team are true experts at vinification, with a firm belief that top quality wine begins with top quality grapes. The real art is to follow the evolution of modern techniques whilst keeping the traditional spirit of Château Gaunoux. We don't prune too short, we de-budding a few time, we tye-down the fruiting cane ... With tractor we make goog spray on the plant, we clip it and plow it. The tradition respected by father an daughter team. The harvest is exclusively carried out by hand, with pickers. For the red wine, after all the grapes have been destalked, they are transferred into stainless steel vats where alcoholic fermentation continue for 20 to 25 days. The vats are equipped with automatic punching down (pigeage) and thermoragulated by computer. After the first fermentation is complete, the wine is pneumatically pressed and transferred into oak barrels where the second fermentation (malolactic) takes place. 12 or 18 month after, the wine is filtered and bottled at the Château. For the white wine, we first press the grappes pneumatically. We put the white juce in vats, where it makes the first fermentation. After it, we transfer the wine in oak barrels to make the second fermentation. It's longer for the white wine. And then, the wine is filtered and bottled at the Château. The wine will rest for 2 or 3 years before being distributed to famous restaurant and cellars throughout the world. In our cellars in Meursault, we have wine since the beginning of the century.
